Texas Sheet Cake Cookies are a fun twist on cake mix cookies. These chocolate cake mix cookies are iced with delicious chocolate icing.

Texas Sheet Cake Cookies

We are on a roll making fun cake mix cookies. I am loving all of the fun ways you can use a cake mix to make delicious desserts that are not just cakes.

I was cleaning out the pantry (finally) and realized I had multiple chocolate cake mixes that I needed to use fairly soon. I decided to make devil's food cake mix cookies and these Texas Sheet Cake Cookies.

Can you tell I am on a roll making cake mix cookies? They are so easy to make and always turn out soft and delicious.

Cookie Ingredients

  • Chocolate Cake Mix
  • Vegetable Oil
  • Eggs

Chocolate Frosting Ingredients

  • Butter
  • Cocoa Powder
  • Milk
  • Powdered Sugar

Optional add-ins - Chopped pecans, chocolate chips, sprinkles

Butter - room temperature butter will work best for the chocolate frosting.

Equipment Needed

Large Mixing Bowl - you want to make sure you use a big enough bowl to easily mix the cookie dough

Saucepan

Cookie scoop - the dough will be thick. Using a cookie scoop helps get even cookies

Baking Sheet - I am a klutz so I really like these baking sheets with sides on them.

Parchment Paper

Small Saucepan

Whisk

Cooling Rack



Recipe Tips

Don't forget to preheat the oven to 350 degrees.

Whisking the eggs in a small bowl before adding them to the cake mix will help everything mix together easier.

The dough will be thick! We use a cookie scoop to get even dough balls.

Prep a baking sheet with parchment paper so you are ready for the dough balls. Spread the dough balls out evenly so there is space for them to flatten out on the prepared baking sheet.

DO NOT OVERBAKE these cookeis! They will be soft and delicious after about 8 minutes in the oven. If you cook them too long they will turn into iced hockey pucks which no one is going to be excited about.

 

I highly suggest icing these Texas Sheet Cake Cookies on a wire rack over a parchment-lined pan. The melted chocolate icing will drip over the cookies and pool on the parchment paper making it easy to clean up.

Then scoop the icing off the parchment paper with a spoon and enjoy it! It is so good!

Ingredients

Cookie Ingredients

  • 15.25 oz Chocolate cake mix
  • 2 Eggs
  • ⅓ cup Vegetable Oil

Chocolate Icing Ingredients

  • ½ cup Butter room temperature
  • 2 Tablespoon Cocoa Powder
  • 3 Tablespoon Milk
  • 2.5 cups Confectioners Powdered Sugar

Instructions

  • Preheat oven to 350 degrees

Cookies

  • Combine chocolate cake mix, vegetable oil, and eggs in a bowl. Mix until combined
  • Scoop onto a parchment-lined cookie sheet. Bake for 7-8 minutes
  • Cool on a wire rack

Chocolate Icing

  • Combine butter, cocoa, and milk in a small saucepan over medium heat. Whisk until the mixture has melted together.
  • Remove from heat and whisk in the powdered sugar until smooth.
  • Pour icing over cookies and spread with a spoon. Allow frosting to cool before serving.
