    We are on a roll making fun cake mix cookies. I love all the fun ways you can use a cake mix to make delicious desserts that are not just cakes.

    I was cleaning out the pantry (finally) and realized I had multiple chocolate cake mixes that I needed to use fairly soon. I made devil's food cake mix cookies and these Texas Sheet Cake Cookies.

    Can you tell I am on a roll making cake mix cookies? They are so easy to make and always turn out soft and delicious.

    Ingredients

    Here is a quick overview of the simple ingredients needed to make epic Texas Sheet Cake Cookies! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

    Cookie Ingredients

    • Chocolate Cake Mix/ chocolate flavor boxed cake mix
    • Vegetable Oil
    • Eggs

    Chocolate Frosting Ingredients

    • Unsalted Butter
    • Cocoa Powder

    Optional Add-Ins: Chopped Pecans, Chocolate Chips, and Sprinkles

    Equipment Needed

    • Large Bowl: You want to use a big enough bowl to mix the cookie dough easily.
    • Saucepan
    • Cookie Scoop: The dough will be thick. Using a cookie scoop helps get even cookies.
    • Baking Sheet - I am a klutz, so I like these baking sheets with sides.
    • Parchment Paper/ silicone mats
    • Small Saucepan
    • Whisk

    How to Make Texas Sheet Cake Cookies

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    1. Preheat ovenย 
    2. Combine the chocolate cake mix, vegetable oil, and eggs in a bowl
    3. Scoop onto a parchment-lined cookie sheet. Bakeย 
    4. Cool on a wire rack.

    Chocolate Icing

    1. Combine butter, cocoa, and milk in a small saucepan over medium heat. Whisk until the mixture has melted together.
    2. Remove from heat and whisk in the powdered sugar until smooth.
    3. Pour icing over the cookies and spread with a spoon. Allow frosting to cool before serving.

    Preparation and Storage

    Make Ahead: These cake mix cookies prepare well ahead of time! Make the cookie dough up to 24 hours before baking, and always keep it refrigerated in an airtight container.

    Storage: Store your leftover Texas Sheet Cake Cookies at room temperature in an airtight container and enjoy them within three days.

    Freezing/How to Freeze: Texas Cake Cake Cookies freeze well, unbaked or baked. The cookie dough will remain good for about three months if stored in an airtight, freezer-safe container. We like storing baked leftovers in an airtight, freezer-safe container, like a Ziploc bag, where theyโ€™ll remain good for about three months.

    How to Reheat: The cookie dough and baked cookies should be thawed overnight in your fridge or for a few hours on your kitchen countertop until they reach room temperature.

    Recipe Variations

    Substitutions: Weโ€™ve used devilโ€™s food cake mix and regular chocolate cake mix with equally delicious results!

    Vegetarian Option: This Texas Sheet Cake Cookie recipe is vegetarian-friendly.

    Vegan Option: Most cake mixes are safe for vegans if you replace eggs and milk with your go-to plant-based substitutes. Always check the packaging to ensure the cake mix contains no dairy, as some have milk. Vegans should also replace the butter in the frosting with a plant-based alternative.

    Gluten-Free: Use a gluten-free cake mix to make this recipe gluten-free.

    Smaller Serving Size + Larger Group/More Servings: We use a 15.25 oz box of chocolate cake mix to yield 21 cookies. Scale the written recipe up or down, depending on your desired quantity.

    Make it Spicy: Chili powder or cayenne powder are great additions that complement chocolate if you want spicy Texas Sheet Cake Cookies.

    Sugar-Free: This recipe contains 22 grams of sugar per serving, but remember that the final amount depends on your ingredients. Swap the chocolate cake mix and confectionerโ€™s sugar for sugar-free alternatives if you want to avoid sugar.

    Tips for the Best Texas Sheet Cake Cookies

    • Cooling your butter to room temperature will help it mix easily into the chocolate frosting.
    • Don't forget to preheat the oven to 350ยฐF.
    • Whisking the eggs in a small bowl before adding them to the cake mix will help everything mix easier.
    • The dough will be thick! We use a cookie scoop to get even dough balls.
    • Prep a baking sheet with parchment paper so you are ready for the dough balls. Spread the dough balls out evenly so there is space for them to flatten out on the prepared baking sheet.
    • DO NOT OVERBAKE these cookies! They will be soft and delicious after about 8 minutes in the oven. If you cook them too long, they will turn into iced hockey pucks, which no one will be excited about.
    • I recommend icing these Texas Sheet Cake Cookies on a wire rack over a parchment-lined pan. The melted chocolate icing will drip over the cookies and pool on the parchment paper, making it easy to clean up.
    • No judgment if you decide to scoop the icing off the parchment paper! It is so good!
