Epic Greek Cucumber Salad recipe is great for lunch or dinner.  This light refreshing salad takes minutes to prepare and tastes amazing. Perfect for a summer barbecue, family dinner, or lunch.

Greek Cucumber Salad Recipe

I have been on a roll making sweet treats and cocktails to share with everyone. My husband looked at me the other day and asked if I would make a Greek salad for him. He was craving tomatoes and cucumbers plus kalamata olives and feta.

This summer salad is so easy to whip up and always tastes amazing. The light lemon juice olive oil dressing compliments the flavors of all the veggies.

You can serve this as a side dish or as a main entree. It makes quite a bit of salad so feel free to half the recipe if you are not looking for a large bowl of salad.

There is no lettuce in this salad which we love. This helps bring the flavors of all the ingredients out and they don't get buried in a ton of lettuce. You can totally add in lettuce if you want some extra greens with this salad.

It has been way too long since we were in Greece! I dream of watching the sunset in Santorini, gushing over the cute Greek cats, and gazing in wonder at the Acropolis in Athens. We have had the amazing opportunity to visit Greece a few times and have loved it.

There is something so magical about being in an area where historical buildings are on every street corner. Greek Food is one of our favorite things to enjoy!

I am still trying to perfect making Saganaki at home. This greek fried cheese is one of my favorite things because how can you go wrong with fried cheese and a bit of lemon. HELLO YUM!

Ingredients

  • Cucumbers
  • Roma Tomatoes
  • Red Onion
  • Sun-Dried Tomatoes
  • Kalamata Olives
  • Feta Cheese

Dressing Ingredients

  • Olive Oil
  • Lemon Juice
  • Dried Oregano

Garnish - Salt and pepper to taste

Optional add ins - You can easily throw in grilled chicken for extra protein in this salad.

Cucumbers - It is up to you if you peel the cucumber before serving the sliced cucumbers. I tend to peel the cucumber just because I like how it looks and tastes but it is really a personal choice. You can cut the cucumbers in rounds, quarters, or bigger chunks depending on how you want them to look. For a really fun look you can spiralize the cucumbers.

Kalamata Olives - You can also use black olives if you prefer the flavor over kalamata olives.

Tools Needed

Vegetable Peeler

Large Serving Bowl - I really like these large salad bowls so you can show off all the delicious ingredients in this salad.

Small Bowl

Whisk/spoon - to mix the dressing together.

Recipe Tips

If you are making this ahead of time for lunch I would leave off the dressing and feta until right before you want to enjoy it. This way all of the flavors don't meld totally together.

If you are serving this for a party, barbecue or dinner I suggest adding the kalamata olives, sundried tomatoes, and feta cheese last so they top the salad and don't get lost under all of the delicious cucumbers.

Ingredients

  • 2 cucumbers peeled and sliced
  • 5 Roma Tomatoes Chopped
  • ½ red onion sliced
  • ¼ cup Kalamata Olives
  • 4-6 Sun Dried Tomatoes sliced
  • ½ cup Feta Cheese

Dressing

  • ¼ cup Olive Oil
  • 2 Tablespoon Lemon Juice about ½ a lemon juiced
  • 2 teaspoon Oregano
  • Salt and pepper to taste to taste

Instructions

  • Chop and dice veggies and place in a large salad bowl.
  • Combine olive oil, lemon juice, oregano in a small bowl and whisk together.
  • Toss salad with dressing and top with salt + pepper to taste. Sprinkle with feta cheese right before serving.
