    Strawberry Poke Cake Recipe

    This Strawberry Poke Cake is the perfect easy dessert recipe! Made with strawberry gelatin, cool whipped topping, white cake mix, and strawberries. This moist delicious cake is perfect for summer barbecues, family dinners, Valentine's Day or any day you want a great strawberry cake.

    This Strawberry Jello Poke Cake is one of our favorite easy desserts. It looks so cool with the strawberry Jello dripping down into the cake.

    I was cleaning out the pantry for our big spring deep clean and realized I had multiple Strawberry Jello boxes which seemed like the perfect reason to make this poke cake.

    We have been having so much fun making strawberry recipes. They are one of our favorite berries to bake with.

    White cake mix, vegetable oil, eggs, Cool whip, Strawberry Jello, Strawberries, and a glass bowl


    Ingredients
    • White Cake Mix
    • Eggs, Oil, and Water - according to the cake mix package
    • Strawberry Jello
    • Boiling Water
    • Cool Whip
    • Fresh Strawberries

    Garnish - Sliced fresh strawberries, red sprinkles

    Strawberry jello - you can use any brand of strawberry gelatin.

    Equipment Needed

    Mixing Bowl

    Hand Mixer

    9x13 baking dish

    wooden spoon - I find that a wooden spoon pokes the perfect holes in the cake

    Large glass measuring cup/pot - I like to use a glass pyrex measuring glass to boil the water in the microwave and then mix in the strawberry jello. You can also boil the water on the stovetop.

    Spatula - to spread the Cool Whip

    How to make Strawberry Jello Poke Cake?

    Step 1 - Bake a white box cake mix according to the box directions. Allow the cake to cool

    Step 2 - Poke holes all over the cake with the end of a wooden spoon or similar kitchen tool.

    Step 3 - Pour the Strawberry Jello mixture evenly over the cake. Trying to get it in as many of the holes as possible so it sinks into the cake.

    The gelatin will not fill the holes up completely! Don't worry if there is still space in the holes. The cool whip topping will sink down in when you ice it.

    Refrigerate the cake for 30 minutes to a few hours so the strawberry flavor can absorb into the white cake.

    Step 4 - Top with Cool Whip evenly spread over the top of the cake.

    Step 5 - Top with sliced strawberries and serve

    Recipe Tips

    Poke holes in the cake once it has cooled completely so it holds it shape.

    Make sure to carefully pour the strawberry jello mixture over the cake spreading it as much as possible.

    Make sure to cool completely before icing with Cool Whip.

    You can use fresh whipped cream instead of Cool Whip but it does tend to fall apart quicker. The Cool Whip is stabilized and will hold its shape.

    You can change this recipe up and use any flavor of Jello Gelatin.

    If you would prefer regular cake icing you can use whipped white icing or cream cheese icing or really any flavor you love. Chocolate would be a fun twist.

    To make this even more decadent you can spread a layer of pie filling across the top of the cake and then top it with whipped topping.

    How do you store a Strawberry Poke Cake?

    Store the cake covered in the refrigerator. The cool whip topping will start to break down if it is stored outside of the refrigerator.

    Ingredients

    • 15 Ounce white cake mix
    • Eggs, oil, and water according to cake mix instructions
    • 3 Ounce Strawberry Jell-0
    • 1 cup Boiling Water
    • 8 Ounce Cool Whip thawed
    • strawberries sliced for garnish

    Instructions

    • Prepare white cake mix according to box directions. Once baked allow to cool for 30 minutes
    • Use a wooden spoon to poke holes in the cake
    • Combine boiling water and Strawberry Jello Mix until combined.
    • Pour the Strawberry Jello mix over the cake making sure to get it in the holes.
    • Refrigerate the cake for 3-4 hours until completely cool and the strawberry jello has settled.
    • Top with Cool Whip evenly spread over the top and garnish with strawberries.
