I am so excited to start sharing Thanksgiving recipes that can be made in the crock pot! You all know how much we love making anything and everything we possibly can with the crock pot. I love that I can set up dinner or our side dishes during the day and they are hot and ready when John gets home from work.
One thing about being a Park Ranger is you never know if you are going to get out of work when you expect to. There always seems to be something coming up that causes John to be late from work. By using the crock pot I know that dinner is hot when he does get home. Plus it is just so easy! And we all know how much I love easy recipes.
Crock Pot Candied Sweet Potatoes Recipe
Ingredients
3 medium sweet potatoes, cut into 1/2 inch rounds
1/2 cup water
1/4 cup butter, cut into pieces
10 packets Equal or sugar subsitute
1 tbsp vanilla
1 tsp nutmeg
Directions
1. Clean and slice sweet potatoes, place in crock pot
2. Add in water, margarine, sugar subsitute, vanilla and nutmeg
3. Cook on low for 7 hours or high for 4 hours
Sweet potatoes will be really tender when they are done cooking. I had to use tongs with plastic covers to gently remove them from the crock pot. They taste so good!
We use either the Hamilton Beach Set ‘n Forget Programmable Slow Cooker, 6-Quart or Crock-Pot 5-Quart Slow Cooker

I love sweet potatoes! Especially if they are candied!
I have been searching for more ways to make sweet potatoes. My Mom mom only ever only made them one way so I am trying to be a bit more adventurous. Will be adding this to our menu rotation.
Sweet potatoes are something we usually only eat around Thanksgiving. Really should incorporate it more – they are so healthy for you.
That sounds really good. I wonder if I could substitute stevia for the equal?
