Is it Spring yet? This Lemon Poppy Seed Bread Recipe makes me think of Spring, warm weather, daffodils and relaxing outside.

The perfect recipe to enjoy while opening the windows and letting the warm breeze come in. Ok maybe it isn't super warm yet but there is no snow on the ground so that has to count for something.

Yesterday I shared that I have been on a spring cleaning binge. Now that it is April all I want to do is keep going through everything in the house and getting organized. This month is all about easy recipes that taste amazing but don't take a ton of time!

Ingredients needed to make Lemon Poppy Seed Bread

Bread Ingredients

  • All-purpose flour
  • Poppy seeds
  • Baking powder
  • Table salt
  • Eggs
  • White sugar
  • Olive or canola oil
  • Vanilla yogurt
  • Milk
  • Vanilla extract
  • Almond extract
  • Fresh lemon

Glaze

  • White sugar
  • Lemon juice
  • Vanilla extract
  • Almond extract

Ingredients

Bread

  • 2 cups all purpose flour
  • 3 TB poppy seeds
  • 1 TB baking powder
  • ½ tsp table salt
  • 3 large eggs lightly beaten
  • ⅔ cup white sugar
  • ½ cup olive oil or canola oil
  • ½ cup vanilla yogurt
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 ½ tsp almond extract
  • zest from one fresh lemon
  • juice from one fresh lemon

Glaze

  • ⅓ cup white sugar
  • 2 TB freshly squeezed lemon juice
  • ¼ tsp vanilla extract
  • ¼ tsp almond extract
US Customary - Metric

Instructions

  • Preheat oven to 350 degrees F with rack on lower middle position. Grease one standard size loaf pan and set aside.
  • In a large bowl, combine flour, poppy seeds, baking powder, and salt. Whisk until incorporated.
  • In a separate bowl, whisk together the eggs, sugar, oil, yogurt, milk and both extracts until well-incorporated.
  • Add wet ingredients to the dry, folding together with spatula until just incorporated. Do not over mix.
  • Pour batter into prepared loaf pan. Bake 55 minutes or until toothpick inserted in the center comes out clean.
  • To prepare glaze, combine ingredients in a bowl and whisk together until combined.
  • Brush glaze generously over warm bread top. Allow the bread to finish cooling on a wire rack.

    I bet my Mom would love this recipe! She used to go to a bakery and get this lemon poppyseed cake all the time.
