    I love how easy the slow cooker makes this vegetable side recipe to prepare! These crockpot stuffed peppers are so dang easy to make and they taste amazing.

    Ingredients Needed

    • Bell Peppers
    • Ground Beef - You can also use ground turkey, add in sausage or use veggie hamburger
    • Onion
    • Egg
    • Rice
    • Tomato Sauce
    • Cheddar Cheese
    • Salt and Pepper

    Recipe Tips

    You can easily change the ground beef hamburger to different meat. These slow cooker stuffed peppers are great with ground turkey, a mixture of sausage and hamburger or make vegetarian stuffed peppers by using veggie meat.

    I like to use whatever rice we have in the house. Since we don't cook a ton of rice I keep individual rice cups that can be made in the microwave and then added into recipes. These crockpot stuffed peppers taste great with white rice, brown rice, or even Mexican rice. It is really up to you and what you have available. If you don't have any cooked rice you can also use quinoa.

    When buying peppers for this recipe I like to hold them in my hand at the store and see if they sit flat. You want a bell pepper with a flat bottom that can stand up in the crockpot. If they are not flat they can fall over in the slow cooker and not look as good when they are done. They still taste amazing but they don't always look great.

    While stuffing the bell peppers I like to put them in a plastic square container so they are held upright. This makes it a lot easier to stuff them and know they are not going to fall over as you do it.

    If you want to add in even more flavor you can mix in a can of black beans, corn, or salsa in with the Ground Beef. You can also mix in a can of ro-tel diced tomatoes for a bit of a kick. These slow cooker stuffed peppers can easily be adapted to your favorite flavors.

    For added flavor, you can add in chili powder, garlic powder, and/or Worcestershire Sauce when cooking the beef mixture.

    A drizzle of sour cream is a delicious addition when serving the stuffed peppers.

    Ingredients

    • 1 pound Ground Beef
    • ยฝ Onion chopped
    • 15 Ounce Tomato Sauce
    • 1 ยฝ cups rice leftover
    • 4 Bell Peppers
    • 1 Egg whisked
    • 1 cup cheddar cheese shredded
    • Salt and pepper to taste

    Instructions

    • Remove caps and seeds from peppers
    • Brown ground beef and onions
    • Combine beef,ย salt, pepper, egg, rice, โ…“ can tomato sauce together
    • Stuff mixture into peppers, stand in the crock pot
    • Cover with remaining tomato sauce.
    • Cover and cook on low for 8-10 hoursโ€ฆ
    • 30 minutes before serving, sprinkle cheddar over the tops of peppers. Cover and continue to cookย until cheddar is melted.
