I love sweet potatoes! I like them baked, broiled and made into fries. Today I decided to make a Crock Pot Sweet Potato Stew Recipe! I figured why not make them into soup in the crock pot.
YUM! This slow cooker stew recipe is so filling and delicious! Plus you all know how much I love easy crock pot recipes. I am still on a soup kick right now. There is just something about winter weather as I dream of Spring that makes me want a hot bowl of soup. Did you see the Crock Pot Broccoli and Cheese recipe we shared a few months ago? YUM! YUM! YUM!
We are focused on eating more veggies, so I figure adding them to soups works perfectly.
Crock Pot Sweet Potato Stew Recipe
1 cup chopped onion
1 cup chopped celery, about 3 stalks
1 cup grated sweet potato
1 cup vegetable broth
1 cup half and half
1/2 cup minced parsley
optional – add in 2 slices of cooked bacon, crumpled
- Add onion, celery, sweet potato, vegetable broth, in the crock pot, cover and cook on low for 6 hours
- Turn crock pot to high and add in 1/2 and 1/2, cook uncovered for 30 minutes
- Season with black pepper, stir in parsley
