I love making soup in the CrockPot, especially during the winter months.
It gets so cold and snowy during the winter that soup becomes the perfect filling meal.
I wish I were using the stove more now since it is so cold, and I could warm up the house a bit. That is the perfect reason to bake up a sweet treat. 🙂
This soup takes some stovetop work, and then the CrockPot does the rest.
One of the things I like about this soup is it only takes a couple of hours in the CrockPot. You don't have to wait for it to cook.

- Medium Onion
- Lean Ground Beef
- All-purpose Flour
- Chicken Broth
- Low-Fat Evaporated Milk
- Cheddar Cheese
- Black Pepper
- Tortilla Chips

How to Make Slow Cooker Cheeseburger Soup
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
- Cook garlic, onions, and celery in a skillet until tender. Spoon into the CrockPot.
- Brown hamburger meat and add to CrockPot.
- Combine flour and chicken broth in a cup, and stir until lump free.
- Pour into skillet with remaining broth, bring to a simmer, and scrape browned bits off of the bottom of the skillet with a wooden spoon.
- Carefully pour the mixture into the CrockPot.
- Stir in evaporated milk, cheese, paprika, salt, and pepper.
- Cover and cook
- Top with crumbled tortilla chips.

Freezing/How to Freeze: Transfer any freezer-bound leftovers to an airtight, freezer-safe container or bag, and enjoy them within three months.
While dairy-based soups typically don’t freeze well since they separate when thawed, roux-based soups are safe for the freezer.
How to Reheat: Reheat your leftovers using the microwave, stovetop, or CrockPot, depending on how many you prepare. Thaw any frozen portions overnight in the fridge to ensure they reheat evenly.
Feel free to change up the ground beef, cheddar cheese, and chicken broth to add a unique twist to your cheeseburger soup; cheeseburgers come in many different forms!
You can replace ground beef with ground chicken, ground pork, or ground turkey if you don’t eat red meat.
Shredded Monterey jack, Colby jack, sharp cheddar cheese, and Tex-Mex cheeses are fantastic substitutes for cheddar cheese.
You can also use vegetable or beef broth if you don’t have chicken broth.
