    Who am I kidding! You don't even have to wait a week. I pretty much use my crock pot daily right now. It is so warm and I just don't want to heat up the house. I make so many different recipes in the slow cooker I love it.

    This Crock Pot Thai Coconut Soup Recipe is super easy to make and tastes amazing. I loved my time exploring Thailand a couple of years ago. There is just something magical about Thailand. I called John while I was there and told him that we could easily move to Thailand for a while and I wouldn't mind it at all. I just felt this crazy sense of zen while I was there. It felt like life slowed down and I was able to savor each moment of the day.

    • Chicken
    • Coconut Cream
    • Chicken or vegetable broth
    • Carrots
    • Sweet pepper, any color (we used red bell peppers)
    • Ginger, ground
    • Garlic, minced
    • Fish sauce (optional)
    • Sugar
    • Lime juice
    • Cilantro

    Equipment Needed

    Vegetable chopper - This is a huge time saver for chopping veggies.

    Crockpot - We suggest using a crockpot that has a digital timer that automatically switches the slow cooker to warm after a set amount of time. This helps make sure your dinner cooks perfectly and you don't have to stress about what time it is going to be done.

    Ingredients

    • 2โ€“ 3 cups Chicken cooked, diced
    • ยผ Cups Cream of Coconut
    • 2โ€“ 3 cups Chicken or vegetable broth
    • 2 Carrots medium, peeled and diced
    • ยฝ Sweet pepper any color
    • 2 teaspoon Ginger ground
    • 1 teaspoon Garlic minced
    • 1 ยฝ Tablespoon Fish sauce optional
    • ยฝ teaspoon White Sugar
    • Lime Juice As desired
    • Cilantro As desired
    US Customary - Metric

    Instructions

    • Mix all ingredients except for the coconut cream in the slow cooker pot. Cook on low for 4 โ€“ 5 hours or high for 2 โ€“ 3 hours.
    • In the last ยฝ hour of cooking, add the coconut cream and let it mix in with the soup. Garnish with a sprinkling of cilantro if you like.

    Notes

    Note: The coconut cream is derived from leaving a can full-fat fat coconut milk in the fridge overnight. When you open the can, the cream will have risen to the top and will be easily scooped off the top, leaving the coconut water behind that can be reserved for other uses.

      This looks, and sounds, yummy. But it also looks like a recipe that could be made on the stove top in 30 minutes or less. I figure 5 to 10 minutes for the broth with veggies added to come to a boil, simmer the veggies for 15 minutes, then mix in the coconut cream and other last minute ingredients. Done in 30 minutes or less.
