Who am I kidding! You don’t even have to wait a week. I pretty much use my crock pot daily right now. It is so warm and I just don’t want to heat up the house. I make so many different recipes in the slow cooker I love it.
This Crock Pot Thai Coconut Soup Recipe is super easy to make and tastes amazing. I loved my time exploring Thailand a couple of years ago. There is just something magical about Thailand. I called John while I was there and told him that we could easily move to Thailand for a while and I wouldn’t mind it at all. I just felt this crazy sense of zen while I was there. It felt like life slowed down and I was able to savor each moment of the day.

Thai Coconut Chicken Soup
Ingredients needed for Crock Pot Thai Coconut Shrimp Soup
2 – 3 C Chicken, cooked, diced
¼ C Coconut Cream
2 – 3 C Chicken or vegetable broth
2 Carrots, medium, peeled and diced
½ Sweet pepper, any color (we used red bell peppers)
2 tsp Ginger, ground
1 tsp Garlic, minced
1 ½ tbsp. Fish sauce (optional)
½ tsp Sugar
As desired Lime juice
As desired Cilantro
How to make Crock Pot Thai Coconut Soup
Mix all ingredients except for the coconut cream in the slow cooker pot. Cook on low for 4 – 5 hours or high for 2 – 3 hours.
In the last ½ hour of cooking, add the coconut cream and let it mix in with the soup. Garnish with a sprinkling of cilantro if you like.
Note: The coconut cream is derived from leaving a can full-fat fat coconut milk in the fridge overnight. When you open the can, the cream will have risen to the top and will be easily scooped off the top, leaving the coconut water behind that can be reserved for other uses.
