Who am I kidding! You don't even have to wait a week. I pretty much use my crock pot daily right now. It is so warm and I just don't want to heat up the house. I make so many different recipes in the slow cooker I love it.
This Crock Pot Thai Coconut Soup Recipe is super easy to make and tastes amazing. I loved my time exploring Thailand a couple of years ago. There is just something magical about Thailand. I called John while I was there and told him that we could easily move to Thailand for a while and I wouldn't mind it at all. I just felt this crazy sense of zen while I was there. - Coconut Cream
- Chicken or vegetable broth
- Sweet pepper, any color (we used red bell peppers)
- Ginger, ground
- Garlic, minced
- Fish sauce (optional)

Slow Cooker Crock Pot Thai Coconut Chicken Soup Recipe
- Mix all ingredients except for the coconut cream in the slow cooker pot. Cook on low for 4 – 5 hours or high for 2 – 3 hours.
- In the last ½ hour of cooking, add the coconut cream and let it mix in with the soup. Garnish with a sprinkling of cilantro if you like.
