    There is just something about Olive Garden Soups. I decided to make this Crock Pot Copy Cat Olive Garden Zuppa Toscana Soup Recipe at home so we could enjoy the soup without worrying about leaving the house.

    • Mix n Chop - We use the mix n chop to break up the sausage and love it.
    • Saucepan - to cook the sausage
    • Crockpot - We suggest using a crockpot that has a digital timer that automatically switches the slow cooker to warm after a set amount of time. This helps make sure your dinner cooks perfectly and you don't have to stress about what time it is going to be done.
    • Soup Bowls

    You will want to plan for a cook time of 7-8 hours if you are cooking this on low. This Zuppa Toscana recipe is perfect for setting up in the morning and having it ready when you want it for dinner.

    1. Cook the spicy Italian sausage and crumble cooked sausage, remove excess grease.ย 
    2. Place chicken stock, water, Italian sausage, potatoes, onion, garlic, and salt and pepper in the CrockPot.
    3. Cook on lowย 
    4. Stir in kale and let cook
    5. Add heavy cream and let warm through

    Substitutions:

    You can use mild Italian sausage instead of hot Italian sausage if you don't want the spiciness.

    Olive Gardens soup does not have bacon in it but you can easily add it in.

    I have read where people have exchanged the potatoes for cauliflower.

    We make this is a slow cooker but you can adapt it to cook in a Dutch Oven or large pot on the stove top or in an Instant Pot Pressure Cooker.

    Vegetarian Option: Replace the chicken stock with vegetable stock and the spicy Italian sausage with a meatless alternative to make this recipe vegetarian.

    Vegan Option: In addition to the guidance for vegetarians, replace the heavy whipping cream and Parmesan cheese with plant-based alternatives to make this recipe vegan.

    Gluten-Free: Look for gluten-free labels on the chicken broth and spicy Italian sausage to ensure no cross-contamination for these ingredients.

    Alcohol-Free Option: This recipe does not contain alcohol, but we have seen other Zuppa Toscana versions that add white wine for extra flavor. You can add white wine vinegar for a similar flavor without the alcohol.

    Ingredients

    • 32 Ounce Chicken Broth
    • 3 cups Water
    • 32 Ounce Spicy Italian Sausage cooked and crumbled
    • 5 Russet Potatoes ยผ in chunks
    • ยฝ large onion diced
    • 2-3 cloves Garlic minced
    • 2 cups kale chopped
    • 1 cup Heavy Whipping Cream
    • Salt and pepper to taste

    Instructions

    • Cook the Spicy Italian Sausage and crumble

      OMG OMG OMG. I made it today. What can I say but OMG. Was absolutely fantastic. My sister made a fresh salad that had fresh strawberries, blackberries, and raspberries along with goat cheese. Was a great compliment to the soup. Thanks for sharing this recipe. Will definitely make it again.
