    Super easy Bisquick Blueberry Muffins Recipe! This blueberry muffin recipe is my go-to when we want quick, fast muffins. They take minutes to prep, and you can have warm muffins on the table in under half an hour!

    This recipe is the perfect way to make quick and easy blueberry muffins.

    I made this recipe four times before I got it photographed.

    The first three times I made this recipe, my husband was home, and while I was waiting for the muffins to cool down to be able to photograph them, they slowly but surely disappeared.

    I learned my lesson after three tries and made this fourth batch while he was at work. LOL!

    Would you believe I started making this recipe back in July or August, and I am finally getting it posted? This past summer feels like it just flew by.

    I love Fall and getting my mind wrapped around holiday planning and recipes. We have been baking a ton!

    As the temperature drops, I dream of making all the baked treats. Keep an eye out for new holiday recipes coming soon!

    Ingredients

    Here is a quick overview of the simple ingredients for making epic Bisquick Blueberry Muffins! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

    • Bisquick Baking Mix
    • Milk
    • Sugar
    • Vegetable Oil
    • Egg
    • Blueberries - fresh or frozen

    Equipment Needed

    • Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
    • Whisk/Spatula
    • Muffin Pan - We use a 12 muffin pan for this recipe.
    • Muffin Cup Liners - Paper baking cups
    • Cooling Rack - Wire rack to cool the muffins on.

    How to make Bisquick Blueberry Muffins

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    Step 1 - Pre-heat oven to 400 degrees

    Place paper muffin liners into the muffin tin so it is ready. If you do not want to use paper liners make sure to grease bottom of the muffin pan.

    Step 2 - Combine Bisquick mix, milk, sugar, vegetable oil, and egg in a large bowl.

    Stir together until well combined.

    Step 3 - Gently fold fresh blueberries into mix gently so the blueberries do not burst.

    Step 4 - Divide batter evenly into 12 medium muffin cups. We fill the muffin cups three-fourths full so there is room for the muffins to grow.

    Step 5 - Bake until golden brown.

    Step 6 - Enjoy some of the best blueberry muffins!

    Preparation and Storage

    Make Ahead: For a make-ahead version, prepare the muffin batter the night before and bake your muffins the next day.

    Storage: Store leftover muffins in an airtight container and store them at room temperature for up to two days or in the fridge for up to five days. Since they contain a perishable ingredient, blueberries, they will last longer stored in the refrigerator.

    Freezing/How to Freeze: Freeze leftovers in an airtight, freezer-safe container or Ziploc bag and enjoy them within three months. You may want to wrap muffins individually in plastic or foil to keep them from freezing together.

    How to Reheat: You can enjoy these Blueberry Muffins at room temperature, straight from the fridge, or reheated in the microwave until warm.

    Recipe Variations

    Substitutions: You can make these Bisquick Blueberry Muffins with fresh or frozen blueberries, depending on what you have available in your kitchen.

    You can use this recipe and switch the blueberries with chocolate chips, raspberries, strawberries, or blackberries. A berry medley also works great.

    Top with cinnamon sugar before baking for extra sweetness. Add a cinnamon streusel topping for extra fun on top.

    Vegetarian Option: This muffin recipe is 100 percent vegetarian!

    Vegan Option: Replace milk and the egg with plant-based substitutes to make this recipe vegan. Example - Dairy-free Almond Milkย 

    Gluten-Free: Use Bisquickโ€™s Gluten-Free Pancake & Baking Mix to make Gluten-free blueberry muffins recipe safe for a gluten-free diet.

    Larger Group/More Servings: You can easily double or triple this recipe. These muffins always go fast in our house. This recipe will make 12 regular-size muffin cups.

    Sugar-Free: The written recipe contains 9 grams of sugar per serving. Bisquick has no sugar-free baking mix, but you can lower the sugar content by swapping white sugar with a sugar-free alternative.

    Tips for the Best Bisquick Blueberry Muffins

    • You can sprinkle sugar over the muffins to make them similar to bakery muffins.
    • Add a teaspoon of lemon zest to the blueberries to make the flavors pop.

    Ingredients

    • 2 cups Bisquick Baking Mix
    • โ…“ cup Milk
    • โ…“ cup White Sugar
    • 2 Tablespoon Vegetable Oil
    • 1 egg
    • 1 cup Blueberries

    Instructions

    • Preheat oven to 400 degrees. Prep muffin pan with baking cups or grease the bottom of the pan.
    • Combine Bisquick, Milk, Sugar, egg, and vegetable oil in a mixing bowl. Whisk to combine.
    • Gently fold in blueberries until they are evenly spread.
    • Divide the batter into the muffin pan. Bake for 13-16 minutes.
