Easy 3 ingredient Lazy Enchiladas are also known as Tik Tok Taquito Enchiladas. It only takes a few minutes to prepare this great easy dinner recipe.

Taquito Enchiladas

These TikTok lazy enchiladas are my husbands new favorite dinner. They are super easy to make and he loves the flavor of them.

I love that you can easily change flavors of Taquitos to make a totally new dinner.

We are big fans of "lazy" dinners as they are being called now. I like to think of them as recipe hacks that save me time and stress when we need an easy dinner.

Have you tried our lazy lasagna recipe. It is similar to this recipe and only uses 3 ingredients.

Pair this lazy enchilada recipe with a side of guacamole, Black Bean salsa or copycat Chili's Salsa, and tortilla chips.

This is the perfect easy dinner for busy weeknights. Spread out a few optional toppings and let everyone create their own enchilada creation.

It takes very little prep time to make this dish and the cooking time is only 25 minutes total. In less than 30 minutes you can have a great easy dinner ready to go!

Ingredients Needed

  • Frozen Taquitos
  • Enchilada Sauce
  • Shredded Cheese

Optional Toppings - shredded lettuce, diced tomatoes, diced onions, sour cream, cilantro, refried beans, green chilis, black olives, red onion, rice

Frozen Taquitos - You can use any flavor you enjoy. Popular options include Chicken and Cheese Taquitos, Steak and Cheese Taquitos, Seasoned ground beef taquitos, southwest chicken taquitos, nacho cheese taquitos, black been and cheese taquitos, diablo chicken taquitos, and charbroiled chicken breast taquitos.

Flour or Corn tortillas can both be used with these shortcut enchiladas.

Enchilada Sauce - Mild or spicy sauce works great. Red enchilada sauce or green enchilada sauce depending on the flavor combo you enjoy.

We tend to use tomatillo green sauce with chicken and red enchilada sauce with beef.

Shredded Cheese - We used shredded cheddar cheese because we like the flavor but any cheese will work. Mexican blend cheese tastes amazing also.

Equipment Needed

Non-stick cooking spray

Can opener - to open the can of enchilada sauce

9 x 13 Baking Pan - Also known as a 3 quart casserole dish. You can also use a smaller 8x8 baking dish to make a smaller serving.

Heat resistant potholders - A couple of years ago, we had a fire scare when we didn't realize we had turned a burner on, and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then, we have only used these heat-resistant potholders.

How to make Lazy Enchiladas

Make sure to preheat the oven.

Step 1 - Evenly spread frozen taquitos in a 9x13 baking dish. Bake

Step 2 - Remove from the oven. Pour enchilada sauce over the top of the taquitos.

Step 3 - Evenly spread shredded cheese over the top of the enchilada sauce.

Return to the oven and bake.

Slow Cooker Instructions

This recipe can be adapted to make in the crockpot.

Stack frozen taquitos in the slow cooker. They may have to go at an angle depending on the size and shape of your crockpot.

Top with enchilada sauce and cook on low for 4 hours, or high for 2 ½ hours.

Sprinkle with cheddar cheese and recover with slow cooker lid until cheese melts. Garnish as desired.

Recipe Tips

Can these be made vegetarian? - Yes! We suggest using black bean and cheese taquitos or nacho cheese taquitos.

How do you store leftovers? - We stored our leftovers in an airtight container in the fridge.

How to do you reheat the enchiladas? - We reheat the in the microwave. They can also be reheated in the air fryer or in the oven.

Can you make this ahead of time? - With only a few minutes of prep time we do not suggest making these ahead of  time.

Can you freeze the Taquito Enchiladas? - We do not recommend freezing the enchiladas. The texture will change and not taste as good as they do the 1st time you make them.

Ingredients

  • 13 Frozen Taquitos 20oz box will have extra taquitos
  • 8 Ounce Sharp cheddar cheese Shredded
  • 20 Ounce Red Enchilada Sauce Two 10 oz cans

Instructions

  • Preheat oven to 400 degrees
  • Spread frozen taquitos into a casserole dish. Bake for 15 minutes
  • Remove from oven, cover in enchilada sauce and top with shredded cheese.
  • Bake for an additional 10 minutes
