This week I have been craving this cheesy baked ziti recipe! I blame it on spending way to much time on Pinterest looking at all the comfort foods.
The weather is turning nice and I am still craving/thinking about pasta goodness. Plus I really needed the excuse to buy a couple of dishes I have been dreaming about.
John and I headed to Fred Meyers to get everything I needed plus all the other fun stuff we might find while shopping. Do you ever get in the mood to wander up and down every aisle of the store and just meander with no real plan? This was my mood while we were at Fred Meyers. We ended up in the gardening section, housewares, outdoor living, and of course all of the grocery aisles.
I found the cutest new pillow for the couch. I am hooked on cute pillows with fun phrases on them. It was not on my shopping list but I had to have it.
I have been really wanting to get some white casserole dishes and serving dishes to add to my collection. Fred Meyers has a great Dash of That line of products that I really like.
Going into the store I knew I wanted to get a new casserole dish and a few kitchen tools. Coming out of the store I left with the best set of dishes and a Cast Iron Enamelware dutch oven in purple/gray that is gorgeous.
Wanting one thing turned into multiple kitchen pans/pots/dishes because of the prices at Fred Meyers. Both sets were on sale for such a great price I couldn’t say no to them.
And I have to admit I am already thinking about a couple of other dishes that I saw in the Dash of That line that I think I must have.
After wandering the aisles of the housewares and dreaming of all the cool sayings they have for the walls in my office we wandered over to the food and found everything we needed for this Cheesy Baked Ziti Recipe.
Plus a few treats to make date night at home even better.
Pre-warning when you make this Cheesy Baked Ziti recipe your house is going to smell so good that it is hard to not want to dive headfirst into the bowl when it comes out of the oven. I had to wait a few minutes for John to come home from work so we could have dinner and I am pretty sure they were the longest 10 minutes of my life….I wanted the cheesy goodness so badly.

Cheesy Baked Ziti Recipe
16oz Simple Truth Penne Rigate
24oz Private Selection Vodka Sauce
16oz Private Selection Alfredo Sauce
15oz Simple Truth Ricotta Cheese
6oz Simple Truth Mozzarella, shredded
pre-heat oven to 350 degrees
1. Cook pasta until it is short of being done, it will cook more in the oven
2. Combine vodka sauce, alfredo sauce, and ricotta cheese in a bowl, stir to mix together
3. Cover the bottom of your casserole dish in sauce, spoon cooked pasta over it and cover with more sauce then cheese, layer 2-3 times depending on your casserole dish. Top with remaining mozzarella cheese
4. Cook for 20-25 minutes, broil the last minute or so until the cheese is bubbling and brown
5. Serve and enjoy
