We recently found a new to us Mexican restaurant here in Spokane and it has become our go-to date night spot.  There is just something about Mexican food that makes me happy. I decided to try and start making some of our favorite Mexican food at home. This way I can save a bit of money and have fun in the kitchen at the same time.  Today we are sharing this delicious Cilantro Lime Recipe Recipe I know you are going to love!

Cilantro Lime Rice Recipe

Ingredients needed to make Cilantro Lime Rice

  • Basmati Rice ( best rice ever )
  • Salt
  • Bay leaf
  • Cilantro
  • Fresh Lime Juice
  • Lemon Juice

Cilantro Lime Rice Recipe

How to make delicious Cilantro Lime Rice! This is fantastic for dinner or leftover lunches!

Ingredients

  • 2 C Basmati Rice best rice ever
  • 2 teaspoon Salt
  • 1 Bay Leaf
  • 5 Tablespoon Cilantro finely chopped
  • ¼ cup Fresh Lime Juice
  • 2 Tablespoon Lemon Juice
US Customary - Metric

Instructions

  • Bring 8 C of water to a boil in a pot.
  • Add the rice, salt, and a bay leaf.
  • -Return the water, rice, salt, and bay leaf to a boil.
  • Boil for an additional 12 minutes, uncovered.
  • Remove the bay leaf.
  • Using a fine strainer drain the rice.
  • Rinse with hot water.
  • Put the rice in a bowl.
  • Cut the cilantro into little pieces.
  • Juice the lime.
  • Juice the lemon.
  • Stir in the cut cilantro, lime juice, and lemon juice.
  • Add salt if more seasoning is needed.
