We recently found a new to us Mexican restaurant here in Spokane and it has become our go-to date night spot. There is just something about Mexican food that makes me happy. I decided to try and start making some of our favorite Mexican food at home. This way I can save a bit of money and have fun in the kitchen at the same time. Cilantro Lime Rice Recipe
We have been having so much fun making new dishes! Here are a few of my favorites that we have shared!
You can’t go wrong pairing any of these dishes with a frosty frozen mango margarita!

Ingredients needed to make Cilantro Lime Rice
2 C Basmati Rice ( best rice ever )
2 tsp salt
1 Bay leaf
5 TBSP finely chopped Cilantro
1/4 cup Fresh Lime Juice
2 TBSP Lemon Juice
How to make Cilantro Lime Rice
-Bring 8 C of water to a boil in a pot.
-Add the rice, salt, and a bay leaf.
-Return the water, rice, sale and bay leaf to a boil.
-Boil for an additional 12 minutes , uncovered.
-Remove the bay leaf.
-Using a fine strainer drain the rice.
-Rinse with hot water.
-Put the rice in bowl.
-Cut the cilantro into little pieces.
-Juice the lime.
-Juice the lemon.
-Stir in the cut cilantro, lime juice and lemon juice.
-Add salt if more seasoning is needed.
How to make delicious Cilantro Lime Rice! This is fantastic for dinner or leftover lunches!
