Delicious Chicken Spaghetti with Rotel is the perfect comfort food dinner recipe. The perfect combination of rotisserie chicken, Rotel, Spaghetti, and Velveeta Cheese.

Chicken Spaghetti with Rotel Recipe

It is so cold and snowy here in Spokane that we have been making all the comfort food we can think of. This chicken spaghetti made with Rotel diced tomatoes is a favorite. The creamy sauce combined with the small bit of spice from the Rotel is amazing.

This is comfort food that tastes amazing. The mix of chicken, creamy cheese sauce, and tomatoes is so good! Plus it makes a ton so there may be leftovers which is always a bonus.

There is over a pound of food which makes it perfect for serving a large family or a small crowd. Add in a few vegetable side dishes, crusty garlic bread, and a killer dessert and you have the perfect comfort food dinner.

My husbands asks frequently when I am making this Rotel Chicken Spaghetti Recipe.

Ingredients Needed

This is a quick overview of the simple ingredients that you'll need to make an epic Rotel Chicken Spaghetti! Specific measurements and step by step instructions are included in the printable recipe card at the bottom of the post.

Rotisserie Chicken or Cooked Chicken Breast - I like using rotisserie chicken pieces or crockpot shredded chicken but you can also use chicken thighs. Change it up and use turkey, ground beef, ham, or veggie meat.

Cream of Chicken Soup/Cream of Mushroom Soup - Any cream soup will work including cream of celery, cream of asparagus

Rotel Diced Tomatoes and chopped green chilies - We use the mild version but you can easily use the spicy, hatch, serrano pepper, or no salt added Rotel.

Garlic Powder - Add a bit of extra flavor goodness to this chicken casserole.

Onion Powder - Adds even more flavor goodness.

Velveeta Cheese - To change up the flavor you can decrease the amount of Velveeta and add in freshly shredded cheddar cheese or mozzarella cheese.

Spaghetti Noodles- This can also be made with penne, macaroni or other pasta favorites.

Salt and Pepper

Optional - To make this even creamier you can add in cream cheese or sour cream. Add in bell peppers for more color and veggies. Sprinkle with cheddar cheese for even more cheesy goodness.

Spaghetti Pot - To cook the spaghetti.

Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

How to make Chicken Spaghetti with Rotel

I've included complete instructions in the printable recipe card at the bottom of the post but here's a quick version.

Preheat oven to 350 degree

Step 1 - Cut rotisserie chicken into bite size pieces

Step 2 - In a large skillet melt the butter, add in chicken, Velveeta cheese, garlic and onion powder.

Cook until heated together. If using raw chicken make sure to cook until chicken is no longer pink.

Cook spaghetti until al dente in a large pot. You want there to be a bit of chew left in the pasta. It will cook a bit more while baking so you don't want it done all the way and getting to soft.

Step 3 - Add in Rotel tomatoes and green chilies. Cook until cheese is fully melted and everything is stirred together.

Step 4 - Add cooked spaghetti and stir together.

Step 5 - Pour everything into a 9x13 casserole pan, evenly spread out in the pan.

Bake until heated all the way through.

Preparation and Storage

Make Ahead – This chicken spaghetti with Rotel can be prepped 2 days ahead of time. Cover the casserole dish with plastic wrap and store in the refrigerator until you are ready to bake it.

Storage – Leftovers should be stored in an airtight container in the fridge.

Freezing/How to freeze – Once cooled wrap in plastic wrap and then aluminum foil or place individual servings in freezer bags. Freeze up to 3 months. Thaw overnight in the fridge before reheating.

How to reheat – Reheat in the oven at 350 degrees or in the microwave.

 

Recipe Variations

Additions - Looking for ways to jazz up your Rotel spaghetti chicken casserole here are some great ideas to add in - spinach, green peas, switch the Velveeta with queso. Top with crushed tortilla chips, crushed Ritz Crackers, or breadcrumbs.

Vegetarian Option - Exchange the chicken for vegetarian meat crumble to make a veggie spaghetti bake.

Vegan Option – This could be made with vegan cheese, vegan cream soup, and a vegan meat substitute. This may change the cooking time needed depending on how the vegan ingredients bake.

Gluten Free -Use zucchini noodles (zoodles)

Smaller Serving Size –

Budget Friendly - Use more pasta than chicken, add beans to fill in the protein.

More Veggies - Add in chopped broccoli or cauliflower.

Make it Spicy – To upgrade the spice you can use the spicy version of Rotel instead of mild Rotel or add in sliced jalapenos.

Larger Group/More servings –This recipe can be doubled and served in two casserole dishes.

Side Dishes - Fruit Salad, Ambrosia Salad, Green Jello Salad, Kidney Bean salad, Pear Salad, Funeral Potatoes

Sweet Side Dishes - Fried apples, Apple Snickers Salad,

Bread - Cheesy Garlic Bread, Olive Garden Breadsticks, Cheddar Bay Biscuits, Garlic Cheese muffins

Ingredients

  • 3 cups Chicken cooked, and cut into pieces
  • 10.75 oz Cream of Chicken Soup
  • 20 oz RO-TEL Diced Tomatoes & Green Chilies 2 cans
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion powder
  • 8 oz Velveeta cheese
  • 8 oz Spaghetti Cooked and drained

Instructions

  • Preheat oven to 350 degrees
  • Cook chicken breast or cut up a rotisserie chicken until you have 3 cups of cut chicken.
  • In a skillet add chicken, garlic and onion powder, cream of chicken soup, Velveeta, and Rotel. Heat until cheese melts and everything mixes together.
  • Stir in Spaghetti until evenly distributed. Pour into a 9x13 baking dish.
  • Bake for 30-35 minutes until fully heated through.
