Oh hello yum! Last week as we were driving through the snow on our way home from Yellowstone and my brain instantly started thinking about chili, comfort foods, winter foods and all the goodness I needed to make in the crock pot. I mean what else are you going to do on an 8-hour drive home but craft new recipes in your head that you can't wait to try. The first recipe I had to share is this Slow Cooker Crock Pot White Chicken Chili Recipe!
We have shared a ton of Crock Pot Chicken Recipes and Crock Pot Chili Recipes and somehow we had not shared a White Chicken Chili Recipe! Gasp! How is that even possible. LOL!
Thankfully I had 8+ hours in the car to think of what would make the best White Chicken Chili Recipe in the world that we could share with you. I knew I wanted to use a rotisserie chicken, Bush's White Chili Beans since I have been seeing them at Walmart and love that they come pre-spiced and full of flavor, and some spices to make it a bit spicy but not to over the top.
Slow Cooker Crock Pot White Chicken Chili Recipe
The nice thing about making chilis is you really get to decide just how much spice and heat you put into the recipe. If you like it mild you can go down to a few pinches of spice or if you like your mouth to be on fire and gasping for breath you can add it by the heaping teaspoon. Totally up to you.
I am a mild flavor girl but my amazing husband is all in on the spices so I tend to make chilis a bit spicier for him.
How to make Slow Cooker Crock Pot White Chicken Chili Recipe
- Rotisserie chicken
- Chicken stock
- Bush's White Chili Beans
- Diced green chilis
- Garlic
- Onion
- Ground cumin
- Kosher salt
- Cayenne pepper
- Sour cream
Optional for topping your chili
cilantro, jalapenos, non-fat sour cream, plain greek yogurt, shredded cheese, tortilla chips
Directions
- Cut the chicken into chunky pieces and add to crockpot slow cooker
- Add remaining ingredients and stir together
- Cook on low for 4-6 hours or high for 2-4 hours
- In the final half-hour add in a cup of sour cream
- Enjoy
If you prefer a creamier chicken you can add in a can of cream of chicken soup to the recipe. You might also check out adding in an additional can of Bush's White Chili Beans if you want the chili to be even more filling. This is a great way to add density to the chili and make it last longer. I love how filling it is with extra beans.

Slow Cooker Crock Pot White Chicken Chili Recipe
Ingredients
- 5-6 cups Rotisserie Chicken
- 4 cups Chicken Stock low sodium
- 30 oz Bush's White Chili Beans do not drain
- 4.5 oz Diced Green Chili Peppers
- 3 cloves Garlic minced
- 1 small onion finely diced
- 2 Teaspoon ground cumin
- ½ Teaspoon kosher salt
- ¼ Teaspoon Cayenne Pepper
- 1 cup Sour Cream
Optional for topping your chili
- cilantro, jalapenos, non-fat sour cream, plain greek yogurt, shredded cheese, tortilla chips
