Tater Tot Breakfast Casserole

I love this easy Tater Tot Breakfast Casserole Recipe! It takes minutes to prepare and tastes so good.

We are all in for brunch most weekends! Being able to sleep in for an extra hour or two and then whipping up this easy tater tot casserole is the best way to start the day.

This is a great casserole for potlucks, family brunch, or leftovers.

We make this with leftover holiday ham but it can easily be changed up to be made with breakfast sausage.

Ingredients

This is a quick overview of the simple ingredients that you'll need to make an epic Tater Tot Breakfast Casserole! Specific measurements and step-by-step instructions are included in the printable recipe card at the bottom of the post.

  • Eggs
  • Diced Ham
  • Cheddar Cheese
  • Bacon
  • Milk
  • Garlic Powder
  • Tater Tots
  • Salt and black pepper

Optional - Salsa, fresh chives, red bell pepper, sour cream, onion, diced tomatoes, hot sauce, fresh spinach, pork sausage, and/or turkey sausage.

Cheese - We used cheddar cheese but you can switch it out with pepper jack cheese or sharp cheddar cheese for more flavor. Go wild and try some Colby Jack Cheese.

Tater tots - we use frozen tater tots straight from the freezer for this recipe.

Equipment Needed

Large Skillet - to cook the bacon.

Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

9x13 casserole baking dish – This casserole fills a 9x13 casserole dish.

Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

How to make Breakfast Tater Tot Casserole

I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

Combine all ingredients except for the tater tots in a large bowl whisk together. Pour into a casserole dish.

Top with a layer of frozen tater tots and extra bacon slices.

Preparation and Storage

Make Ahead – This can be made ahead of time and kept in the fridge overnight. Just get everything prepped and store it to bake when you are ready to serve.

Storage – Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

Freezing/How to freeze – Make sure to cook the breakfast casserole completely and let cool. Wrap tightly and cover in aluminum foil or transfer to a freezer safe container. Thaw overnight in the refrigerator before reheating.

How to reheat – Reheat in the oven, microwave, or air fryer. In the oven make sure it is covered in foil and bake at 350 degrees for 20 minutes.

Recipe Variations

Substitutions - Change up the meat in this breakfast casserole and use ham, Italian sausage, turkey sausage, chicken sausage, turkey bacon, or plant based meat.

Add in diced bell peppers, Rotel Diced Tomatoes, spinach, broccoli, or your favorite veggies.

Vegetarian Option - Plant based vegetarian sausage or bacon can be used in this recipe.

Vegan Option – A vegan plant based egg mixture can be used along with vegan sausage mixture and vegan cheese.

Gluten Free - Double check the ingredient labels to make sure everything is gluten-free. Some sausage brands are not gluten-free.

Smaller Serving Size – This recipe can be made smaller in an 8x8 serving dish. Just change the serving size below or spread it between two 8x8 baking dishes and freeze the leftovers.

Make it Spicy – Sprinkle hot sauce over the top or mix in your favorite spices (red pepper flakes).

Larger Group/More servings – This recipe can easily be doubled. Just make sure you have enough baking dishes for all of the ingredients.

Recipe Tips

Don't forget to preheat the oven.

This breakfast tater tot casserole can be stored in the fridge for 3-4 days once it is completely cooled. Make sure it is stored in a covered container.

This breakfast casserole can be stored in the freezer, just make sure to wrap in plastic wrap and then aluminum foil. Make sure to slowly thaw overnight in the fridge before reheating.

Ingredients

  • 12 Eggs
  • 2 cups ham diced
  • 2 cup Cheddar Cheese
  • 1.5 cups Bacon cooked and cut into pieces
  • 1 cup Milk
  • ½ Teaspoon garlic powder
  • 32 oz tater tots

Instructions

  • Preheat oven to 425 degrees
  • Combine eggs, ham, cheese, bacon, milk, and garlic powder in a bowl. whisk together.
  • Pour into a 9x13 casserole dish. Top with frozen tater tots evenly add in any extra bacon.
  • Bake for 40-45 minutes until eggs are set. Let rest for a few minutes before serving.
