No Bake Eggnog Pie

I may have bought way to much eggnog from Costco. LOL! I grabbed the box of 2 eggnogs from Costco thinking it would be enough to make a couple of recipes perfect for the holidays. I am going to admit that I didn't stop to look at what size the boxes were. I just tossed them in our cart and kept going to get all the things on my grocery list.

Well in true Costco fashion the boxes are not small. I am telling you this so you are mentally prepared for the sheer number of eggnog recipes that will be shared this month. I think there will be at least 5 new eggnog recipes but honestly there may still be more. I haven't even finished the first bottle of eggnog yet and I have made 5 new recipes.

Did you see the RumChata Hot Chocolate and RumChata Eggnog Cocktail we shared earlier this week? I have been deep in baking, cooking, and finding ways to make the holiday season a little easier. This great recipe is perfect for Christmas Dinner or any time you need to serve a quick and easy Christmas dessert.

I truly love that you can make this ahead of time and just store it in the refrigerator. Make sure you put it in a spot nothing is going to fall on it or squish the pie filling. We recently had a jalapeno pepper decide to nose dive into a pie that I was waiting to photograph.

If eggnog a family favorite in your house or something people run from?

Ingredients

  • Vanilla Instant Pudding Mix
  • Eggnog
  • Milk
  • Ground Nutmeg
  • Cool Whip whipped topping
  • Graham Cracker pie crust

Crust - You can use a store bought graham cracker crust or a homemade crust. You can also use a pie crust if you prefer that flavor.

Nutmeg - If you are not a fan of nutmeg you can easily leave it out.

Vanilla Pudding Mix - You just need the dry mix, you don't need to prepare it according to the box directions. If you want to change the flavor you can use cheesecake pudding mix instead.

Optional Ingredients - If you like the flavor of rum with your eggnog you can add in a bit of rum extract.

Optional Garnishes - Nutmeg, cinnamon, ice cream, additional whipped topping.

Equipment Needed

Hand Mixer
Spatula
Large Mixing Bowl

How to Make a No-Bake Eggnog Pie

Step 1 - Combine eggnog, milk, vanilla pudding mix in a large mixing bowl. Using a hand mixer or whisk mix together

You want everything to combine and for the pudding mix to activate with the liquid.

Step 2 - Gently fold in the Cool Whip Whipped Cream. Make sure to smoothly mix it in so you don't lose the air in the cool whip. This is what makes the egg nog pie nice and fluffy.

Step 3 - Pour into a graham cracker crust and evenly spread. Refrigerate for at least 3-4 hours.

Step 4 - You can serve this no bake eggnog pie as is or spread cool whip over the top for an additional creamy layer.

Step 5 - Garnish with ground nutmeg and serve.

Recipe Tips

If you really like the flavor of nutmeg you can mix some of it in with the eggnog and milk when making the pie or just use it as a garnish.

This easy eggnog pie can be made a day ahead of time. Just make sure to keep it refrigerated.

Can you freeze eggnog pie?

Yes! I would leave off the final cool whip topping and cover the pie before placing it in the freezer. It will be good for 3-4 months in the freezer.

Does eggnog have alcohol?

It really depends on the type that you buy. Some store bought eggnogs do have alcohol already mixed in them. Most that we find in the dairy section of our local grocery store do not have alcohol in them.

What is Eggnog?

Eggnog is a milk and egg drink normally served during the holidays. It has also been called milk punch.

Eggnog has a sweet creamy custard flavor.

Where to buy Eggnog?

We find eggnog in our local grocery store during the holiday season. It normally appears in the dairy case around early November and can be found until Christmas.

You can also find spiked eggnog in many liquor stores.
