    This Stuffed Pepper Soup Crockpot Recipe is so filling and easy to make.

    This slow-cooker soup is perfect for whipping out as the weather gets colder and makes us crave more comfort food. It is both filling and delicious while still having some veggies in it.

    ย My family loves when we have a huge slow cooker filled with soup on a chilly fall day. As the weather turns I start to make as many soups as I can.ย 

    Ingredients

    Here is a quick overview of the simple ingredients needed to make an epic Crockpot Stuffed Pepper Soup! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

    How to Make CrockPot Stuffed Pepper Soup

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    1. Brown the ground beef with the onion. You could also add other spices to the meat.
    2. Drain and place in slow cooker.
    3. Add remaining ingredients, except rice,ย 
    4. Cover and cookย 
    5. Add rice and stir

    Make Ahead: This soup is a fantastic make-ahead dish for later enjoyment!

    Storage: store your CrockPot Stuffed Pepper Soup leftovers in the refrigerator and consume within three days. Make sure to store any leftovers in an airtight container.ย 

    Freezing/How to Freeze: Leftovers will remain good for about three months when stored in an airtight, freezer-safe container or freezer bag.

    We love to make a big batch of this pepper soup recipe and freeze it for another day.

    How to Reheat: When youโ€™re ready to enjoy some soup again, refrigerated and frozen leftovers reheat well using your microwave, stovetop, or CrockPot set to low for 6-8 hours. Be sure to thaw them overnight or at room temperature until about halfway defrosted to save cooking time and ensure that your leftovers heat evenly.

    Recipe Variations + Tips for the Best CrockPot Stuffed Pepper Soup

    Substitutions:ย 

    Ground turkey is an excellent substitute for beef if you donโ€™t consume red meat. Be sure to replace the beef broth with chicken or vegetable broth if you go this route.

    Similarly, you can swap the ground beef for any ground sausage, such as Italian, for an Italian CrockPot Stuffed Pepper Soup. We have seen people use ground chicken for a different taste.ย 

    Additionally, we use green and red peppers, but this recipe works well with any color bell pepper you enjoy.

    White and brown rice work equally well if you have a preference. You can also use riced cauliflower if you prefer for low carb.ย 

    Vegetarian + Vegan Option: This recipe is vegetarian and vegan-friendly if you replace the ground beef with a plant-based substitute, such as Beyond Meat, and the beef broth with vegetable broth.

    Gluten-Free: All of the ingredients in this slow-cooker soup are naturally gluten-free. Storebought broth sometimes contains additives that are unsafe for a gluten-free diet, so check the product label to confirm before you start cooking.

    Alcohol-Free Option: Bowl of Delicious adds red wine to their Stuffed Pepper Soup with Rice if you donโ€™t mind this ingredient in your dish. Red wine pairs well with ground beef.

    Smaller Serving Size + Larger Group/More Servings: The written recipe yields six servings using a pound of ground beef. Scale it up or down, depending on your desired number of servings, keeping in mind that you may need to work in batches if you scale up.

    Make it Spicy:ย 

    We use diced tomatoes with roasted garlic and onions, but you can use one of Rotelโ€™s spicy varieties for a Southwestern soup with a kick.

    Spicy Italian sausage is an excellent substitution for ground beef if you want heat but want to keep the flavor the same.

    If you still want to use ground beef or ground turkey, red pepper flakes, jalapeรฑo peppers, and habaรฑero peppers are another way to keep the flavor the same but add spiciness.

    Sugar-Free: This recipe contains 7 grams of sugar per serving. Use sugar-free canned tomatoes and tomato sauce to make it sugar-free.

    Ingredients

    • 1 lb extra lean ground beef
    • 1 cup Onion chopped
    • 14.5 Ounce diced tomatoes with roasted garlic and onions
    • 15 Ounce Tomato Sauce
    • 2 cups green and red peppers chopped
    • 3 cups Beef Broth

    Instructions

      I love V8 Juice, but prefer to drink it canned, cold, and by itself (or with a side of cottage cheese). Oddly, it's the only way I can actually eat (drink?) tomatoes. Any other way gives me terrible indigestion. Great job on the recipes!
