Ground turkey is an excellent substitute for beef if you don’t consume red meat. Be sure to replace the beef broth with chicken or vegetable broth if you go this route.

Make it Spicy:
We use diced tomatoes with roasted garlic and onions, but you can use one of Rotel’s spicy varieties for a Southwestern soup with a kick.
