    I love this easy dip recipe! It takes minutes to prepare and tastes fantastic.

    This homemade ranch dip has the epic flavor of Hidden Valley Fiesta Ranch Dip in a quick and easy recipe the family will love.

    The flavor of the diced tomatoes and green chilis from the Rotel mix perfectly with the original ranch seasoning mix, sour cream, and cheese. This recipe is not super spicy. You can use different spice levels of Rotel if you want a spicier veggie dip.

    One of my favorite things about this homemade fiesta ranch dip is that you can make it ahead of time. Mix everything and store it in the fridge until itโ€™s time to serve it. I make it a few hours before we serve it so the flavors can meld together and become even more delicious.

    Preparing it beforehand also frees me to relax before we have people over or stress about other things.

    The whole family will love this flavorful dip! We are big fans of creamy dips that are packed with flavor.

    Ingredients

    Here is a quick overview of the simple ingredients for making an epic Fiesta Ranch Dip! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

    • Ranch Dressing Dip Mix
    • Sour Cream
    • Rotel Diced Tomatoes
    • Mexicorn/Southwest Corn
    • Mexican Four-Cheese Blend or Cheddar Cheeseย 

    Optional: Green Onions for Garnish

    If you want to give this dip even more flavor you can use the Fiesta Ranch Dip mixes from Hidden Valley. They have additional flavors of peppers and tomatoes.

    We use a large container of ranch seasoning salad dressing mix but you can easily use the individual ranch mix packets for this recipe.

    Equipment Needed

    • Large Mixing Bowl: We are big fans of this glass batter bowl with a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
    • Spatula/Wooden Spoon

    How to Make Fiesta Ranch Dip

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    Step 1 - Drain excess liquid from the Rotel and the Southwest Corn.

    Step 2 - Combine all of the ingredients in a mixing bowl. Stir together until well combined. Store in the refrigerator until you are ready to serve.

    Preparation and Storage

    Make Ahead:ย 

    Making this recipe beforehand is excellent if you donโ€™t want to stress about making it right before the big game. Mix everything and refrigerate it overnight in an airtight container.

    Storage:

    Refrigerate Fiesta Ranch Dip leftovers in an airtight container and enjoy them within three days.

    Freezing/How to Freeze:

    We do not suggest freezing this dip since it has dairy and cheese. When it thaws, the texture is just not the same.

    Recipe Variations

    Substitutions:

    If you can't find Southwest corn at the grocery store, you can substitute any other flavors of corn.

    We use a large ranch dressing mix container, but you can easily use the individual ranch mix packets for this recipe.

    Vegetarian Option: This dip is naturally vegetarian.

    Vegan Option: Replace the ranch dressing mix, sour cream, and cheese with plant-based alternatives to make this recipe vegan.

    Gluten-Free: Gluten-free eaters should use a gluten-free ranch dressing mix to make this recipe safe for a gluten-free diet. Hidden Valley Original Ranch Seasoning is gluten-free.

    Smaller Serving Size + Larger Group/More Servings: The written recipe makes six servings. Scale it up or down to your desired yield.

    Make It Spicy: You can spice up this dip using one of Rotelโ€™s spicy varieties.

    Sugar-Free: The written recipe contains 6 grams of sugar per serving. Look for a sugar-free alternative to southwest corn to make this recipe sugar-free.

    You can also use fat free sour cream if desired.

    Tips for the Best Fiesta Ranch Dip

    • You can use the delicious Fiesta Ranch Dip mixes from Hidden Valley to give this dip even more flavor. They have additional flavors of peppers and tomatoes.
    • You can add 8 ounces of cream cheese to make this dip creamier. You will want to mix it with the sour cream and then add the remaining ingredients.
    • To make a heartier dip, feel free to add in black beans.
    • We do not use taco seasoning in this recipe. I have heard of a few recipes using it, but we have yet to add this ingredient to our dip.

    What to Serve with Fiesta Ranch Dip

    Aside from serving this flavor-packed dip with veggies, corn or tortilla chips, celery, carrot sticks, bell pepper slices, pita chips, toast points, or Frito Scoops, you can pair it with other tailgating and snacktime favorites for a game-day-ready appetizer platter in no time!     • 16 Ounce Sour Cream
    • 10 Ounce RO-TEL Diced Tomatoes & Green Chilies
    • 11 Ounce Southwest corn
    • 1 cup Shredded Cheddar Cheese or Mexican four cheese blend
