Fiesta Ranch Dip Recipe
I love this easy dip recipe! It takes minutes to prepare and tastes amazing.
This homemade ranch dip has the epic flavor of Hidden Valley fiesta ranch dip in a quick and easy recipe the family will love.
The flavor of the diced tomatoes and green chilis from the Rotel mix perfectly with the original ranch seasoning mix, sour cream, and cheese. This recipe is not super spicy. You can use different spice levels of Rotel if you want a spicier veggie dip.
One of my favorite things about this homemade fiesta ranch dip is that you can make it ahead of time. Just mix everything together and store it in the fridge until you are ready to serve it. I try to make it a few hours before we plan to serve it so the flavors have time to meld together and become even more amazing.
This also frees me up to relax before we have people over or stress about other things.
Ingredients
- Ranch Dressing Mix
- Sour Cream
- Rotel Diced Tomatoes
- Mexicorn/Southwest Corn
- Mexican four-cheese blend/cheddar cheese
Serve with veggies, Corn chips, tortilla chips, celery, carrot sticks, bell pepper slices, pita chips, toast points, Frito Scoops
Optional - Garnish with green onions
If you want to give this dip even more flavor you can use the Fiesta Ranch Dip mixes from Hidden Valley. They have additional flavors of peppers and tomatoes.
We use a large container of ranch seasoning salad dressing mix but you can easily use the individual ranch mix packets for this recipe.
Equipment Needed
Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
Spatula/Wooden Spoon
How to make Fiesta Ranch Dip
Step 1 - Drain excess liquid from the Rotel and the Southwest Corn.
Step 2 - Combine all of the ingredients in a mixing bowl. Stir together until well combined. Store in the refrigerator until you are ready to serve.
Recipe Tips
This recipe can be made ahead of time so you don't have to stress about making it right before the big game. just mix everything together and store it in the refrigerator in an air tight container overnight.
If you can't find Southwest corn at the grocery store you can substitute any other flavors of corn.
We do not suggest freezing this dip since it has dairy and cheese in it. When it thaws it is just not the same.
To make this dip creamier you can add in 8oz of cream cheese. You will want to mix it with the sour cream and then add in the rest of the ingredients.
To make a heartier dip feel free to add in black beans.
We do not use taco seasoning in this recipe. I have heard of a few recipes with it but we have not added it to ours.

Ingredients
- 1 Ounce Ranch dressing mix = 2 tbsp
- 16 Ounce Sour Cream
- 10 Ounce RO-TEL Diced Tomatoes & Green Chilies
- 11 Ounce Southwest corn
- 1 cup Shredded Cheddar Cheese or Mexican four cheese blend
Instructions
- Drain excess liquid from the southwest corn and the Rotel.
- Combine all ingredients in a large mixing bowl and stir together.
- Refrigerate in a covered container until ready to serve.
