    I love how quick and easy it is to make this easy creamy Velveeta Queso with Hamburger. All you need is 4 ingredients and a few minutes for everything to heat up.

    Perfect for game days, holiday parties, potlucks, or any time you want a quick and easy queso dip.

    The perfect combination of Rotel tomatoes, Velveeta cheese, hamburger, and seasoning. This is one of our favorite easy dip recipes.

    This Rotel cheese dip can be customized if you want it spicy or mild.

    Ingredients Needed

    • Velveeta
    • Rotel Diced Tomatoes and green chilies
    • Ground Beef

    Serve with tortilla chips, crackers, toasted bread, carrots, celery, pretzels, breadsticks, or any of your favorite dippers.

    Ground Beef -  You can also use ground turkey, ground sausage, chicken, or veggie meal crumbles.

    Rotel diced tomatoes and green chilies - Rotel comes in spicy, fire roasted, original, no salt added, or mild. It is up to you which can of Rotel tomatoes you use. If you don't have any Rotel you can sub with salsa.

    Optional - To make it even cheesier you can sprinkle cheddar cheese over the top of it. You can make it even creamier by adding in a brick of cream cheese.

    Add in chili powder or taco seasoning for extra flavor while cooking the hamburger.

    Optional toppings - sour cream, diced jalapenos, chipotle peppers, or avocado

    Equipment Needed

    Large Skillet - Make sure to use a large enough skillet that you easily mix everything together.

    Hamburger Mix n Chop

    Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

    Serving Dish - this can be served in a cast-iron skillet or in a serving dish. This recipe can be served in a slow cooker to keep it warm for parties.

    How to make Velveeta Rotel Dip with Ground Beef

    Step 1 - Brown ground beef over medium heat until cooked. Crumble with mix n chop until the hamburger is no longer pink.

    If you are adding in taco seasoning or chili powder I suggest adding it in while the ground beef is cooking.

    Step 2 - Drain grease from the pan. Add in Velveeta, Rotel, and Chili Powder. Stir until smooth and melted.

    Do NOT drain the Rotel before adding it to the ground beef!!!!

    Step 3 - Serve hot with tortilla chips

    Slow Cooker Velveeta Dip Recipe

    This dip works great in a crockpot. Brown the beef on the stovetop, drain the grease and then add the hamburger into the slow cooker with the Velveeta and Ro-tel.

    Turn the slow cooker to low and stir randomly until everything is melted and smooth. Turn the crockpot to warm before serving.

    Recipe Tips

    If you have any leftovers they can be stored in the refrigerator for up to 3 days. Make sure they are in a sealed airtight container.

    This dip can be stored in a freezer safe container in the freezer for up to 3 months. Just thaw it in the fridge and then heat it before serving.

    This classic cheesy queso dip can be reheated in the microwave, on the stovetop, or in a slow cooker.

    If you find that the cheese starts to harden you can place your skillet back on the stovetop over medium heat to reheat it.

    Ingredients

    • 1 pound Ground Beef
    • 8 Ounce Velveeta cheese cubed
    • 10 Ounce RO-TEL Diced Tomatoes & Green Chilies

    Instructions

    • Brown ground beef in a skillet until no longer pink. Drain great from the skillet.
    • Add Velveeta and Rotel to the ground beef and stir until smooth.
