    Jiffy Cornbread with Sour Cream is the perfect easy, moist cornbread that takes minutes to prepare. Great for pairing with dinner, chili, or as a snack. You can make these into cornbread muffins in a cast iron skillet or a baking pan.

    This recipe is the best Jiffy Cornbread Recipe weโ€™ve made! It turns out moist and delicious while only taking a few minutes to prepare. The best part is this recipe makes an entire 9x13 baking dish of moist cornbread.

    You only need a handful of simple ingredients, including Jiffy Corn Muffin Mix, Sour Cream, Eggs, Milk, and Vegetable Oil.

    You can make this a sweet cornbread by adding sugar to the mix. The sweetness adds to the flavor of the Jiffy Cornbread.

    Top this moist cornbread with melted butter and a drizzle of honey, or dip it in chili. However you serve it, this cornbread makes a fantastic side dish.

    My husband grew up putting cornbread in a bowl and putting milk with it. Have you heard of this?

    The first time he did this in front of me, I thought he had lost his mind. I had never heard of or seen someone put cornbread in milk before. He grew up in Alabama and said his entire family does it.

    I am still unsure if this is a thing, but he loves it, so I just shake my head and let him enjoy it.

    The sour cream works similarly to buttermilk, giving the cornbread extra moisture and enhancing the taste while not significantly impacting the cornbread's texture.

    Ingredients

    Here is a quick overview of the simple ingredients needed to make an epic Jiffy Cornbread with Sour Cream! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

    • 2 boxes of Jiffy Corn Muffin Mix
    • Corn Niblets
    • Butter
    • Sour Cream
    • Eggs
    • Milk

    Optional - sugar - You can add in 2 or 3 teaspoons of sugar if you want a sweeter cornbread

    Serve with Texas Roadhouse butter and/or honey butter

    Corn Niblets - You can also use creamed corn if you want softer corn mixed in.

    Equipment Needed

    • 9x13 baking dish
    • Non-stick spray
    • Large Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
    • Heat resistant potholdersย - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

    How to Make Jiffy Cornbread with Sour Cream

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    1. Preheat oven
    2. Combine all ingredients in a large mixing bowl and stir by hand.
    3. Pour batter into a non-stick sprayed 9x13 baking pan. Bakeย 

    Preparation and Storage

    Make Ahead: It is best to bake this Jiffy Cornbread as soon as possible after combining the ingredients. The leavening ingredients in the mix activate when they mix with the wet ingredients.

    Storage: Cornbread leftovers stored in an airtight container last for up to two days at room temperature or up to five days in the fridge.

    Freezing/How to Freeze: Jiffy recommends storing leftovers in an airtight, freezer-safe container and enjoying them using their mixes within one month.

    How to Reheat: Jiffy includes instructions in the link above on thawing your cornbread at room temperature and reheating it in the microwave or oven.

    Recipe Variations

    Substitutions:

    You can use creamed corn instead of corn niblets or whole kernel corn if you want softer corn mixed in.

    Swap the sour cream with plain, nonfat Greek yogurt for a lighter and healthier version.

    Vegetarian Option: This recipe is vegetarian if you use JIffy Vegetarian Corn Muffin Mix. The original variety contains lard.

    Vegan Option: In addition to the guidance for vegetarians, vegans should use plant-based substitutes for milk, eggs, and sour cream.

    Gluten-Free: Gluten-free eaters should use a gluten-free corn muffin mix. Jiffy has no gluten-free mixes.

    Smaller Serving Size + Larger Group/More Servings: This recipe can quickly scale up or down to your desired yield. It is easy to double it across two baking pans if you need a large amount of cornbread.

    Make It Spicy: To add some spice, add a handful of diced jalapeรฑos as we did in our Bacon Jalapeรฑo Bread.

    Sugar-Free: The written recipe contains 3 grams of sugar per serving. Make this cornbread recipe sugar-free using a sugar-free cornbread mix and corn with no sugar added.

    • Follow the instructions below for making this moist cornbread with sour cream! You do not want to follow the directions on the Jiffy Cornbread Mix box.
    • Mix in ยฝ to a cup of cheddar cheese with all the ingredients to make cheesy cornbread.
    • You can adapt this recipe to make cornbread muffins. Bake at 400ยฐF for 15-20 minutes.
    • You can also turn this cornbread into a slow cooker cornbread.
