Jiffy Cornbread with Sour Cream is the perfect easy moist cornbread that takes minutes to prepare. Great for pairing with dinner, chili, or as a snack. You can make these into cornbread muffins, in a cast iron skillet, or in a baking pan.

Jiffy Cornbread with Sour Cream

We think this is the best Jiffy Cornbread Recipe! It turns out moist and delicious while only taking a few minutes to prepare. The best part is this recipe makes a full 9x13 baking dish of moist cornbread.

All you need is a few simple ingredients including Jiffy Corn Muffin Mix, Sour Cream, Eggs, Milk, and Vegetable Oil.

You can make this a sweet cornbread by adding in a bit of sugar to the mix. The sweetness adds to the flavor of the Jiffy Cornbread.

Top this moist cornbread with melted butter, honey, or dip it in chili. However, you serve it this cornbread makes an amazing side dish.

My husband grew up putting cornbread in a bowl and putting milk with it. Have you heard of this?

The first time he did this in front of me I thought he had lost his mind. I had never heard of or seen someone put cornbread in milk before. He grew up in Alabama and said his entire family does it.

I am still not sure if this is a thing but he loves it so I just shake my head and let him enjoy it.

The sour cream works similar to buttermilk giving the cornbread extra moisture and tastes amazing. It enhances the taste while not making a huge impact on the texture of the cornbread.

Perfect for savory meals!

Ingredients

  • 2 boxes of Jiffy Corn Muffin Mix
  • Corn Niblets
  • Butter
  • Sour Cream
  • Eggs
  • Milk

Optional - sugar - You can add in 2 or 3 teaspoons of sugar if you want a sweeter cornbread

Serve with Texas Roadhouse butter and/or honey butter

Corn Niblets - You can also use creamed corn if you want softer corn mixed in.

Equipment Needed

9x13 baking dish

Non-stick spray

Large Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

Recipe Tips

You can change out the sour cream and use plain nonfat Greek Yogurt instead.

It is easy to double the recipe and make 2 baking pans of cornbread.

This recipe can easily be adapted to make cornbread muffins! Just bake at 400 degrees for 15-20 minutes

Make sure to follow the instructions below for making this moist corn bread with sour cream! You do not want to follow the directions on the Jiffy Cornbread Mix box.

To make cheesy cornbread just add in ½ cup to a cup of cheddar cheese while mixing all the ingredients.

To add a bit of spice you can add in diced jalapenos.

Store in an airtight container at room temperature.

You can also make this into a slow cooker cornbread.

Ingredients

  • 2 Jiffy Cornbread Mix 2 - 8.5 oz boxes
  • ⅔ cup Milk
  • 15.25 Ounce Corn
  • 2 Eggs
  • 1 cup Sour Cream
  • ½ cup Vegetable Oil

Instructions

  • Preheat oven to 400 degrees
  • Combine all ingredients in a large mixing bowl and stir by hand.
  • Pour batter into a non-stick sprayed 9x13 baking pan. Bake for 25 minutes until toothpick comes out clean.
