One of our favorite desserts on a Carnival Cruise is the Carnival Chocolate Melting Cake. It is on the menu nightly and is so good! While they make them by the hundreds, we luckily do not have to, which is good for our waistlines and poor kitchens. Watching them prepare the Warm Chocolate lava cake was terrific. Talk about a stack of butter and a massive pile of chocolate. It was so amazing to see.

If you have a Carnival Cruise booked, we recommend the Chef's Table for a behind-the-scenes look at the kitchens. It is truly a fantastic experience! Plus, the food is beyond delicious!

Carnival Cruises Warm Chocolate Melting Cake Recipe you can make at home! This is the perfect way to recreate your cruise vacation.

    Preparation and Storage

Make Ahead + Storage: We rarely leave leftovers of this delicious chocolate cake, but you can keep any leftover portions refrigerated in an airtight container for up to three days. You can also make the batter and keep it in the fridge for up to three days before baking.

Freezing/How to Freeze: Nothing beats the gooeyness of a fresh-from-the-oven Carnival Chocolate Melting Cake, but you can freeze any extra portions in an airtight container or bag for up to three months. Wait for the cake to cool, and wrap it snugly in foil or plastic before sending it to the freezer to keep the freezer burn at bay.

How to Reheat: Thaw your leftover portions overnight in the fridge, then reheat them for a few minutes in the microwave or oven, depending on how many servings you prepare.

    Recipe Variations

Substitutions: This recipe works well with dark chocolate chips, melting wafers, or baking chocolate.

Vegetarian Option: Our CopyCat Carnival Chocolate Melting Cake is a vegetarian delight!

Vegan Option: Replace dark chocolate, butter, and eggs with vegan substitutes to make this cake vegan-friendly. We recommend using a liquid egg substitute to keep the cakeโ€™s texture silky and moist.

Gluten-Free: Gluten-free eaters should replace all-purpose flour with gluten-free flour. Pure chocolate is gluten-free, but processed chocolate products may contain gluten-unsafe ingredients, so replace this ingredient with gluten-free chocolate if you are highly sensitive.

Smaller Serving Size + Larger Group/More Servings: The written recipe makes four servings. Scale it up or down to your desired yield, making sure you have extra ramekins to fit the batter if you scale up.

Sugar-Free: The written recipe contains 21 grams of sugar per serving. Use sugar-free baking chocolate and a white sugar alternative to make this cake sugar-free.

Tips for the Best Carnival Chocolate Melting Cake

    • Room-temperature eggs and warm chocolate are easier to mix evenly, so bring both ingredients to room temperature beforehand.
    • Melting chocolate for baking is easy and doesnโ€™t require fancy equipment! Make a double boiler by placing the chocolate in a small bowl, then place the bowl in a saucepan filled with an inch or two of water, ensuring the water level is low enough that it doesnโ€™t reach the inside. Set the heat to low and let the chocolate melt away.
    • We love serving this cake with a scoop of vanilla ice cream! How ice cream melts into a gooey, warm chocolate cake is a sight to behold and taste.
    • Mix peanut butter or Nutella into your cake batter for a nutty Chocolate Melting Cake! We picked up this tip on one of our cruise trips.
