    I first crafted this recipe when I was totally and completely over winter and ready for spring.

    I am always ready for spring weather. When this transition point comes around, I keep reminding myself April showers bring May flowers.

    Today I am excited to share a hot, comforting soup with everyone that you can enjoy whether youโ€™re defrosting from winter weather or crave a warm bowl any other time of the year.

    Crock Pot Beer and Cheese Soup is easy to make and tastes fantastic!

    I made a massive pot of this so John would have leftovers while I am gone this week.

    I also made this recipe before heading to Cincinnati to meet with Proctor and Gamble!

    I was so excited to be participating in their Science of Sleep event. Let's be honest; I don't know anyone who would complain about more sleep or better sleep!

    I learned many valuable tools and information to help us all sleep better.

    Since I would be out of town for a few days, I decided to load up the fridge and freezer with meals John could quickly reheat.

    As is the case whenever I leave for work trips, Iโ€™m always curious to know whether he eats the food I make or goes out with our neighbor to eat all the food I don't like.

    We put together a big list of sides for beer cheese soup to help make dinner easier.

    How to Make CrockPot Beer Cheese Soup

    I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.

    1. Combine onion, carrot, celery, red pepper, salt, black pepper, broth, and butter in the CrockPot.
    2. Cover and cook on low
    3. Stir flour and cold water to make a smooth paste .
    4. Stir the mixture into the soup with cream cheese, cheddar, and beer.
    5. Cover and cook on highย 
    6. Set to warm for serving.
    7. Sprinkle with bacon and green onions.

    Preparation and Storage

    Make Ahead: Many of this soupโ€™s components prepare easily beforehand. I cut staples we often use, such as onions, bacon, celery, carrots, and peppers, a few times a month and freeze them in freezer-safe plastic baggies to always have some ready. You can also use pre-shredded cheddar cheese to cut down on prep time.

    Storage: Refrigerate any leftover portions of your CrockPot Beer Cheese Soup in an airtight container and enjoy within three days.

    Freezing/How to Freeze: Weโ€™ve seen varied guidance on this since this soup contains dairy, but the consensus is that beer cheese soup is safe to freeze in an airtight, freezer-safe container for up to three months.

    How to Reheat: Partially thaw any leftovers you plan to enjoy in the fridge, then transfer them to a saucepan set to low heat until serving temperature. With a light hand, add chicken or vegetable broth to thin the soup to your desired consistency. Add fresh garnishes when youโ€™re ready to serve.

    Ingredients

    • 1 small onion chopped
    • 1 Carrots chopped
    • 1 Celery chopped
    • 1 red bell pepper small, chopped
    • 3 โ…” cups Chicken Broth
    • 2 Tablespoon Unsalted Butter
    • ยฝ cup All Purpose Flour
    • โ…“ cup Cold water
    • 8 oz Cream Cheese cut into ยฝ cubes
    • 2 cups cheddar cheese shredded
    • 1 cup Beer
    • Salt
    • Black Pepper
    • Bacon Crumbled
    • green onions sliced

    Instructions

    • Combine onion, carrot, celery, red pepper, salt, pepper, broth and butter in crock pot
    • Cover and cook on low for 7-9 hours, until veggies are tender
    • Stir together flour and cold water to make a smooth paste in a small bowl
    • Stir into soup along with cream cheese, cheddar and beer
    • Cover and cook on high for 30-60 minutes, stirring halfway
    • Turn to warm for serving
    • Sprinkled with bacon and green onions
